Pancakes to Remember!


Ben is the pancake maker in our home. He has fiddled with the many recipes that I have provided, and in the process of his frustration of "which one to use", he discovered this tasty combination that requires no recipe! He simply, remembers the ratios and applies the increased increments when we have company for breakfast (which often!).

So this is our (generous 3-4 pancakes) per person pancake formula ratio:

1C each of wheat flour and milk
1T each of baking powder and Rapedura (or sugar of choice)
pinch of salt (tiny pinch up to a couple pinches depending on the size of your batch)

Throw it in a bowl, whisk it until smooth and fry it on a hot (coconut) oiled or buttered griddle/skillet.

So easy to remember, right?!! We no longer use make ahead mixes or read a recipe for our pancakes. It is so simple to whip up pancakes from memory in a snap, no matter how many people we have to serve that morning.

Am I reading this correctly? This amount is for one person and makes 3-4 pancakes? What diameter? No eggs? No oil? And the husband has to make it, right? ;)

Tee Hee...That is right. I can't give you an accurate diameter, but they are "full size" pancakes. :-) Save your eggs for the top (or beside) the pancakes! (YUM!!) and your right, the only oil/butter needed is to grease your griddle/skillet. Just 1C Flour, 1C milk, 1T b.powder, 1T sugar per person served. (See I did that from memory!!) :-) This recipe is not exclusive to husbands, but it sure is a great one for them to do if they are willing! :-)

I mixed up a batch of just the powder mix last night before bed...enough for all three kids. This morning I added 3 cups of milk to the jar and shook it like crazy. I ended up having to add more milk (for our desired consistency) and it made about 18 pancakes that were 3-4 inches in diameter (using a 1/4 c. scoop). They were light and fluffy and SO easy! The kids loved them.

It messed with my pancake paradigm, but they were perfect without eggs or oil. :-) Thanks for this great recipe! I have a 1/2 gallon jar filled with the powder mix in my pantry. I love easy.
